Pumpkin Seed Pesto

Ingredients

3/4 cup sprouted pumpkin seeds*

2 cups fresh basil

2 cups baby spinach

3 tbsp olive oil or avocado oil

3 tbsp lemon juice

1/4 tsp garlic powder

Water

Himalayan salt to taste

Directions

  1. Add first six ingredients to a blender and start the blender.
  2. Slowly add the water, pushing down the greens periodically, blending until the pesto is the desired consistency.
  3. Taste and add salt if desired to taste.
  4. Store in a covered container in the fridge.

Notes

*I use Go Raw brand. Works with sunflower seeds too.
