Taco Soup


Directions

1 large red onion, minced

2 lbs grass-fed ground beef

16 ounces grass-fed beef bone broth

1 16 ounce can of organic diced tomatoes or tomato sauce 

1 16 ounce can of organic black beans, drained (optional)

2 organic red peppers, diced small

4 garlic cloves, minced

1 tbsp cumin

1 tbsp chili powder

1 tsp paprika

3/4 tsp Himalayan salt

1/2 tsp freshly ground black pepper

Avocado, optional

Notes

  1. Cook the onions on low in a dutch oven (or similar pot) on low until soft.
  2. Add the beef and cook on medium-low until browned.
  3. Add the remaining ingredients and allow to simmer on low for 30 minutes or more.
  4. Taste and add more salt if desired. 
  5. For a spicier soup, add some cayenne pepper or some sliced jalapenos.
  6. Top with sliced or diced avocado.
