Sweet Potato Chili


Cooking Time

2-3 hours

Ingredients

1 cup bone broth (pasture raised) or vegetable broth

1/4 onion, diced

1 cup black beans

1/2 cup garbanzo beans

1 small sweet potato, peeled and diced (or equivalent amount of canned sweet potato)

3 tablespoons of tomato paste

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

1/8 - 1/4 tsp cayenne

Directions

  1. Add broth and sweet potato to crock pot and cook on low for an hour or two until sweet potato is fork tender.
  2. Use an immersion blender to blend sweet potatoes with broth (or pour in small batches to a regular blender).
  3. Add remaining ingredients into crock pot and cook on low for 1 hour or more.

Note: For a heartier meal, you can add one pound of cooked grass-fed ground beef. This is how I typically make it.
