Pumpkin Cupcakes

Ingredients

1 cup pumpkin puree

1 cup almond butter

1/2 cup pure maple syrup

2 eggs, pasture raised and organic

1 tsp baking soda

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp nutmeg

Pinch of Himalayan salt

Directions

  1. Preheat the oven to 350.
  2. Line a muffin pan with 12 parchment paper liners.
  3. Mix all ingredients except for the eggs together in a large bowl.
  4. Taste for sweetness and add more maple syrup if necessary.
  5. Add the eggs and mix well.
  6. Evenly divide the batter among the 12 cups.
  7. Bake at 350 for 35-40 minutes or until a toothpick inserted into the center comes out clean.
