Peanut Butter (or Almond Butter) Cookies

Ingredients

3/4 cup coconut sugar

1 cup peanut butter (or almond butter)

2 eggs, organic or pasture-raised

Directions

  1. Preheat oven to 350.
  2. Whisk the eggs in a medium bowl.
  3. Add sugar and mix well.
  4. Add peanut butter and mix well.
  5. Using a cookie scoop, place them evenly spaced on a Silpat-lined cookie sheet.
  6. Bake for 10 minutes or until they appear dry on top.

Notes

  1. Peanut butter ingredients should be just peanut butter and salt. Try to use one that doesn't have added sugar or oils. 
  2. If you like a sweeter cookie, you can add chocolate chips, or simply boost the sweetness of the recipe with 3-4 drops of liquid stevia (which would need to be added in step 2).
