Maple Pecan Granola

Ingredients

1 cup oats

2/3 cup pecans, lightly chopped

2 tbsp coconut oil

2 tbsp pure maple syrup

1/4 tsp cinnamon

1/4 tsp salt

1/4 tsp pure vanilla extract

Directions

  1. Preheat the oven to 275 F.
  2. Add the coconut oil to a large glass mixing bowl and place in the pre-heating oven until the coconut oil is melted.
  3. Remove from the oven and mix in the maple syrup and vanilla.
  4. Add the remaining ingredients to the bowl and mix well.
  5. Spread the mixture evenly, in a thin layer, on a parchment or Silpat lined baking pan.
  6. Place on the middle rack of the oven and bake for 20 minutes, mixing half way through. 
  7. Allow to cool.
