Chocolate Covered Cookie Dough Squares

This recipe is super easy to make with minimal ingredients. Please note that it is mostly nut butter and nut flour so it is intended to be a very rich and decadent treat of just a small square.

Ingredients

1 cup blanched almond flour

1 cup almond butter

2 tbsp coconut nectar or maple syrup

1 cup chocolate chips, heaping

1 tbsp coconut oil

Directions

  1. Mix the first three ingredients in a bowl. Add a pinch of salt if your almond butter is unsalted. Almond butter texture can vary, so if the mixture is very dry, add a tablespoon of water to the mix.
  2. Fold in slightly less than 1/2 the chocolate chips, until well incorporated (leaving enough for the chocolate layer).
  3. Press the mixture flat into an 8X8 glass baking dish lined with parchment paper.
  4. In a separate bowl, add the remaining chocolate chips and melt using double boiler method or the microwave. If using the microwave, cook on high for one minute, stir and then cook on high for another 30-60 seconds, watching it closely.
  5. Stir in coconut oil until all chips and oil are melted.
  6. Pour over the bars and spread into an even layer.
  7. Place the bars in the fridge for a few hours until the chocolate layer is hardened.
  8. Slice and serve.
  9. Store in the fridge.

Notes

To make this recipe Keto, use only one tablespoon of coconut nectar, which is lower glycemic than maple syrup and optionally you can enhance the sweetness with some monk fruit or stevia drops. Also, use sugar free chocolate chips, such as Lily’s. With less sweetener, add a tablespoon of water.
